Budget Chicken for Boomers

Ingredients:

Eight chicken thighs  (serves four plus leftovers)

One cup of plain non fat yoghurt

One TBSP of curry powder

One TBSP of olive oil

One tsp of the following:

Garlic, oregano, basil, tarragon

One bunch of green onions chopped

˝ cup of parsley chopped

Instructions:

Preheat oven to 350 degrees

Mix yoghurt and all spices

In medium size pyrex baking dish line with olive oil &

Chopped green onions and parsley

Add chicken and cover with yoghurt sauce.

Bake uncovered 350 deg. approx 1 hour and 15 minutes or until done…

Salt and pepper to taste

Serve with brown rice
